and is it just me ....whenever i get the Itch for hunting my my mouth begins to water ...

Oh yea thats it ...Because i have a ton of awesome recipes to make with Wild meat ...

Mikey,still have a few steak of Moose,Caribou and Deer,wont last till hunting,hope I'll have enough strenght to draw the bow.lol

after reading this post i told the wife and see trotted on down to the freezer and dug out a moose roast mmmmm and yorkshire puddingmmm :-P :-P

Speaking of roasts and steaks, etc... Bowzone - how is your friend with the ill daughter doing? Could they use some more donated elk meat?

(Edit) Err. let me rephrase that, I wasn't trying to take a stab... or be insensitive to the little girl's situation.

I expected to get comments after asking if any elk meat could still be donated... its just the way things go! So here's my solution: we hunt together for some elk and for doing all the field dressing and hoofing it out you can keep half of the animal! I'll do all the base camp stuff... sound reasonable?

MMMM, moose steaks + :beer: Just had some of last years moose, but freezer is getting low, gonna need some meat soon, Sept 1st fly in hunt can't come fast enough.

Spiced Southwestern Elk

Spiced southwestern steak
A sprinkling of my powerful spice mixture gives all meat a real flavor wallop. I found this dry rub works just as well on tender steak as burgers.




Preparation time 10 minutes
Barbecuing Time 15 minutes
Cooking time 30 minutes or less
Makes 4 to 6 servings

2 lbs (1 kg) Top Grade Elk steaks , at least 1 inch (2.5 cm) thick
2 tsp (10 mL) granulated sugar
1 tsp (5 mL) freshly ground black pepper
2 tsp (10 mL) ground coriander
½ tsp (2 mL) paprika
½ tsp (2 mL) garlic powder
¼ tsp (1 mL) cayenne pepper

1. Preheat barbecue and oil grill. Place steak on a cutting board or large piece of waxed paper. In a small bowl, stir sugar with pepper and other spices. Generously sprinkle over top of steak, then turn and sprinkle other side. On thicker steaks or for maximum spiciness, heavily coat with spice mixture and rub into surface.

2. Barbecue steak 10 minutes, then turn and continue grilling until done as you like, about 5 minutes more for medium. Serve right away with a fully dressed baked potatoe and a bottle of your fave beverage. A red wine goes well ....yet so does a cold beer
